Agarooligosaccharides (AOS)
Introduction
Gelidium elegans, red algae, composes 70% dietary fiber as called agar. The agar is not easily decomposed in nature, so it has been consumed solid form. Agarose, a component of agar, has a chain form in which 3,6-anhydro-L-galactose and D-galactose bonds are repeated, and each bond is alternately linked to an α-galactosidic bond and β-galactosidic bond. The sequential degradation of these bonds by β-agarase and α-neoagaro-oligosaccharides-hydrolase produces agarooligosaccharides. Agarooligosaccharides consist of anhydro galactose and odd number of galactose bonds, and have been shown to have anti-tooth decay, prebiotics, antioxidant, anti-inflammatory, skin whitening, anti-aging, and cognitive improvement effects.What is agarooligosaccharides?
